Here's a recipe for veg biryani:

Ingredients:

  • 2 cups basmati rice
  • 2 onions, sliced
  • 1 cup mixed vegetables (carrots, peas, beans, etc.)
  • 1 cup yogurt
  • 1 tbsp ginger-garlic paste
  • 2 tbsp Harichand biryani masala powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 2 bay leaves
  • 2 cinnamon sticks
  • 4 cardamom pods
  • 4 cloves
  • Salt to taste
  • 2 tbsp ghee or oil
  • Coriander leaves for garnishing

Instructions:

  1. Wash and soak the rice for 30 minutes. Drain the water and keep the rice aside.
  2. In a pan, heat the ghee or oil and add the sliced onions. Fry until golden brown and keep aside.
  3. In the same pan, add the mixed vegetables and fry for 2-3 minutes.
  4. Add ginger-garlic paste,  Harichand biryani masala powder, turmeric powder, red chili powder, bay leaves, cinnamon sticks, cardamom pods, cloves, and salt to taste. Mix well and fry for another 2-3 minutes.
  5. Add the yogurt and mix well. Cook for another 2-3 minutes.
  6. In a separate pot, bring water to a boil and add the soaked rice. Cook until the rice is 80% done. Drain the water and keep the rice aside.
  7. In a large pot, layer the rice and vegetable masala alternately, starting and ending with a layer of rice.
  8. Sprinkle the fried onions and coriander leaves on top.
  9. Cover the pot and cook on low heat for 10-15 minutes, until the rice is fully cooked.
  10. Serve hot with raita or any vegetable curry of your choice.
