Here's a recipe for shahi paneer, a creamy and rich Indian curry made with paneer (cottage cheese) in a tomato-based gravy:

Ingredients:

For the paneer marinade:

  • 250g paneer, cut into cubes
  • 1/4 cup thick yogurt
  • 1 tsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/4 tsp turmeric powder
  • Salt to taste

For the gravy:

  • 2 tbsp oil
  • 1 tbsp ghee
  • 2 bay leaves
  • 2 cloves
  • 2 green cardamom pods
  • 1 cinnamon stick
  • 1 large onion, finely chopped
  • 1 tbsp ginger-garlic paste
  • 2 medium-sized tomatoes, finely chopped
  • 1/2 tsp red chili powder
  • 1 tsp coriander powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp Harichand Shahi paneer masala powder
  • Salt to taste
  • 1/4 cup fresh cream
  • 2 tbsp chopped coriander leaves for garnish

Instructions:

  1. In a bowl, mix together the yogurt, ginger-garlic paste, red chili powder, coriander powder, turmeric powder, and salt. Add the paneer cubes and mix well to coat them with the marinade. Set aside for 20-30 minutes.
  2. Heat oil in a pan and fry the marinated paneer cubes until golden brown. Remove and keep aside.
  3. In the same pan, add ghee and the whole spices (bay leaves, cloves, cardamom pods, and cinnamon stick). Fry for a few seconds until fragrant.
  4. Add the finely chopped onions and sauté until they turn translucent.
  5. Add the ginger-garlic paste and sauté for a minute.
  6. Add the chopped tomatoes, red chili powder, coriander powder, turmeric powder, and salt. Mix well and cook until the tomatoes become soft and mushy.
  7. Turn off the heat and let the mixture cool down a bit. Remove the bay leaves, cloves, cardamom pods, and cinnamon stick.
  8. Transfer the mixture to a blender and blend until smooth.
  9. Pour the blended mixture back into the pan and add water to adjust the consistency of the gravy. Bring to a boil.
  10. Add the fried paneer cubes and Harichand Shahi paneer masala powder. Mix well and simmer for 5-7 minutes.
  11. Turn off the heat and add fresh cream. Mix well.
  12. Garnish with chopped coriander leaves and serve hot with rice or naan.
