Here's a recipe for shahi paneer, a creamy and rich Indian curry made with paneer (cottage cheese) in a tomato-based gravy:
Ingredients:
For the paneer marinade:
- 250g paneer, cut into cubes
- 1/4 cup thick yogurt
- 1 tsp ginger-garlic paste
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/4 tsp turmeric powder
- Salt to taste
For the gravy:
- 2 tbsp oil
- 1 tbsp ghee
- 2 bay leaves
- 2 cloves
- 2 green cardamom pods
- 1 cinnamon stick
- 1 large onion, finely chopped
- 1 tbsp ginger-garlic paste
- 2 medium-sized tomatoes, finely chopped
- 1/2 tsp red chili powder
- 1 tsp coriander powder
- 1/4 tsp turmeric powder
- 1/2 tsp Harichand Shahi paneer masala powder
- Salt to taste
- 1/4 cup fresh cream
- 2 tbsp chopped coriander leaves for garnish
Instructions:
- In a bowl, mix together the yogurt, ginger-garlic paste, red chili powder, coriander powder, turmeric powder, and salt. Add the paneer cubes and mix well to coat them with the marinade. Set aside for 20-30 minutes.
- Heat oil in a pan and fry the marinated paneer cubes until golden brown. Remove and keep aside.
- In the same pan, add ghee and the whole spices (bay leaves, cloves, cardamom pods, and cinnamon stick). Fry for a few seconds until fragrant.
- Add the finely chopped onions and sauté until they turn translucent.
- Add the ginger-garlic paste and sauté for a minute.
- Add the chopped tomatoes, red chili powder, coriander powder, turmeric powder, and salt. Mix well and cook until the tomatoes become soft and mushy.
- Turn off the heat and let the mixture cool down a bit. Remove the bay leaves, cloves, cardamom pods, and cinnamon stick.
- Transfer the mixture to a blender and blend until smooth.
- Pour the blended mixture back into the pan and add water to adjust the consistency of the gravy. Bring to a boil.
- Add the fried paneer cubes and Harichand Shahi paneer masala powder. Mix well and simmer for 5-7 minutes.
- Turn off the heat and add fresh cream. Mix well.
- Garnish with chopped coriander leaves and serve hot with rice or naan.
