Here's a recipe for sambar, a flavourful South Indian lentil stew:

Ingredients:

  • 1 cup toor dal (pigeon peas)
  • 1 medium-sized onion, finely chopped
  • 1 medium-sized tomato, chopped
  • 1 small eggplant, diced
  • 1 small carrot, diced
  • 1 small potato, diced
  • 1/2 cup chopped mixed vegetables (such as beans, okra, or drumstick)
  • 2 tbsp Harichand sambar masala powder
  • 1 tsp turmeric powder
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1-2 dried red chillies
  • 1 sprig curry leaves
  • 2 tbsp oil
  • Salt to taste
  • Tamarind pulp (extracted from a small lemon-sized ball of tamarind)

Instructions:

  1. Rinse the toor dal thoroughly and soak it in water for 20-30 minutes.
  2. In a pressure cooker, add the soaked toor dal, turmeric powder, and 3 cups of water. Cook for 4-5 whistles or until the dal is cooked.
  3. Once the pressure has released from the cooker, mash the dal and keep it aside.
  4. In a pan, heat oil and add mustard seeds. Once they splutter, add cumin seeds, dried red chillies, and curry leaves. Sauté for a few seconds.
  5. Add onions and sauté till they turn translucent.
  6. Add the chopped tomato and cook until it becomes soft and mushy.
  7. Add the mixed vegetables, diced eggplant, diced carrot, and diced potato. Mix well and cook for 2-3 minutes.
  8. Add Harichand sambar masala powder and mix well. Cook for another 2-3 minutes.
  9. Add the mashed dal and mix well. Add salt to taste and adjust the consistency of the sambar by adding water as needed.
  10. Add tamarind pulp and mix well. Bring the sambar to a boil and let it simmer for 10-15 minutes on low heat.
  11. Serve hot with rice, idli, or dosa.
