Here's a recipe for sambar, a flavourful South Indian lentil stew:
Ingredients:
- 1 cup toor dal (pigeon peas)
- 1 medium-sized onion, finely chopped
- 1 medium-sized tomato, chopped
- 1 small eggplant, diced
- 1 small carrot, diced
- 1 small potato, diced
- 1/2 cup chopped mixed vegetables (such as beans, okra, or drumstick)
- 2 tbsp Harichand sambar masala powder
- 1 tsp turmeric powder
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1-2 dried red chillies
- 1 sprig curry leaves
- 2 tbsp oil
- Salt to taste
- Tamarind pulp (extracted from a small lemon-sized ball of tamarind)
Instructions:
- Rinse the toor dal thoroughly and soak it in water for 20-30 minutes.
- In a pressure cooker, add the soaked toor dal, turmeric powder, and 3 cups of water. Cook for 4-5 whistles or until the dal is cooked.
- Once the pressure has released from the cooker, mash the dal and keep it aside.
- In a pan, heat oil and add mustard seeds. Once they splutter, add cumin seeds, dried red chillies, and curry leaves. Sauté for a few seconds.
- Add onions and sauté till they turn translucent.
- Add the chopped tomato and cook until it becomes soft and mushy.
- Add the mixed vegetables, diced eggplant, diced carrot, and diced potato. Mix well and cook for 2-3 minutes.
- Add Harichand sambar masala powder and mix well. Cook for another 2-3 minutes.
- Add the mashed dal and mix well. Add salt to taste and adjust the consistency of the sambar by adding water as needed.
- Add tamarind pulp and mix well. Bring the sambar to a boil and let it simmer for 10-15 minutes on low heat.
- Serve hot with rice, idli, or dosa.
