Pav Bhaji is a popular street food in India, especially in Mumbai. It's a spicy vegetable curry served with buttered pav (bun). Here's the recipe:

Ingredients:

  • 4-5 medium-sized potatoes, peeled and diced
  • 1 cup cauliflower florets
  • 1 cup chopped tomatoes
  • 1 cup chopped onions
  • 1 cup chopped bell peppers
  • 1 cup green peas
  • 2-3 green chilies, chopped
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon Harichand pav bhaji masala
  • 1 teaspoon cumin seeds
  • 1 teaspoon red chili powder
  • 1 tablespoon butter
  • Salt to taste
  • 6-8 pav buns
  • 2 tablespoons chopped coriander leaves
  • 1 lemon, cut into wedges

Instructions:

  1. Boil the potatoes and cauliflower florets until soft. Drain and mash them with a potato masher or fork. Keep aside.

  2. Heat butter in a pan and add cumin seeds. Once they start spluttering, add chopped onions and green chilies. Sauté until onions turn translucent.

  3. Add ginger-garlic paste and sauté for a minute or two until the raw smell goes away.

  4. Add chopped bell peppers, green peas, and chopped tomatoes. Cook until the tomatoes turn mushy and the vegetables are soft.

  5. Add pav Harichand bhaji masala, red chili powder, and salt to taste. Mix well and cook for a minute.

  6. Add the mashed potatoes and cauliflower to the mixture and mix well. Cook for 5-10 minutes, stirring occasionally.

  7. Heat a griddle or tawa and toast the pav buns with some butter until they turn slightly golden brown.

  8. Garnish the bhaji with chopped coriander leaves and serve hot with toasted pav buns and lemon wedges on the side.
