Dum Aloo is a popular Indian dish made with baby potatoes that are simmered in a rich and flavorful gravy. Here is a simple recipe for Dum Aloo:

Ingredients:

  • 15-20 baby potatoes
  • 1 large onion, finely chopped
  • 2-3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2-3 tomatoes, pureed
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp Harichand Dum Aloo masala powder
  • Salt to taste
  • Oil for cooking
  • Fresh coriander leaves for garnish

Instructions:

  1. Wash the baby potatoes and prick them all over with a fork. Boil them in salted water until they are partially cooked. Drain the water and let the potatoes cool down.

  2. Heat oil in a pan and fry the baby potatoes until they are golden brown. Remove and keep aside.

  3. In the same pan, add more oil and add cumin seeds. Once they start to sizzle, add finely chopped onions, minced garlic, and grated ginger. Cook until the onions turn translucent.

  4. Add the pureed tomatoes and all the spices - turmeric powder, red chili powder, coriander powder, Harichand Dum Aloo masala powder, and salt. Mix well and cook for 5-6 minutes until the gravy thickens.

  5. Add the fried potatoes to the gravy and mix well. Add 1 cup of water and cover the pan with a lid. Cook on low heat for 15-20 minutes until the potatoes are cooked through and the gravy thickens.

  6. Garnish with fresh coriander leaves and serve hot with rice or naan.
