Amritsari chole is a delicious Punjabi dish that is often enjoyed with bhatura or puri. Here is a simple recipe to make Amritsari chole at home:
Ingredients:
- 1 cup chole (chickpeas), soaked overnight
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 green chili, chopped
- 1 tsp ginger-garlic paste
- 2 tsp amchur (dried mango powder)
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp Harichand amritsari Chole masala powder
- 1/2 tsp red chili powder
- 1/2 tsp turmeric powder
- 2 tbsp oil
- Salt to taste
- Water as required
For tempering:
- 1 tbsp oil
- 1 tsp cumin seeds
- 2-3 cloves
- 1 inch cinnamon stick
- 2-3 cardamom pods
Instructions:
- Drain the soaked chickpeas and rinse them thoroughly. Pressure cook the chickpeas with 3 cups of water and salt for about 20-25 minutes or until they are soft and cooked through. Keep them aside.
- In a pan, heat 2 tbsp of oil and add chopped onions. Saute until the onions turn golden brown.
- Add ginger-garlic paste and chopped green chili. Saute for a few seconds.
- Add chopped tomatoes and cook until they turn soft and mushy.
- Add amchur powder, cumin powder, coriander powder, Harichand Amritsari chole masala powder, red chili powder, turmeric powder, and salt. Mix well and cook for 1-2 minutes.
- Add the cooked chickpeas and mix well. Add water as required to adjust the consistency.
- Cover the pan with a lid and let the chole simmer on low heat for about 10-15 minutes or until the gravy thickens and the chickpeas are coated with the masala.
- In another pan, heat 1 tbsp of oil and add cumin seeds, cloves, cinnamon stick, and cardamom pods. Saute for a few seconds.
- Pour the tempering over the chole and mix well.
- Serve hot with bhatura or puri.
