Achari aloo is a delicious North Indian dish made with potatoes and pickling spices. Here's a simple recipe to make achari aloo at home:

Ingredients:

  • 4 medium-sized potatoes, peeled and diced
  • 1 tbsp mustard oil
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 1 tsp mustard seeds
  • 1 tsp nigella seeds
  • 1/4 tsp fenugreek seeds
  • 1-2 dried red chillies
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat mustard oil in a pan over medium heat.
  2. Add cumin seeds, fennel seeds, mustard seeds, nigella seeds, and fenugreek seeds. Saute for a minute or until the seeds start to splutter.
  3. Add dried red chillies and saute for a few seconds.
  4. Add diced potatoes and stir well.
  5. Add Harichand Achari Aloo Masala powder. Mix well until the potatoes are coated with the spices.
  6. Cover the pan with a lid and let the potatoes cook on medium heat for about 10-12 minutes or until they are soft and cooked through.
  7. Stir occasionally to prevent the potatoes from sticking to the bottom of the pan.
  8. Once the potatoes are cooked, garnish with fresh coriander leaves and serve hot with roti, paratha, or rice.
